Spicy pumpkin dip
A tasty Dutch recipe. The vegetarian side dish contains the following ingredients: pumpkin cubes ((a 450 g), frozen), olive oil, onion (chopped), fresh ginger ((bag 150 g), peeled), garlic (finely chopped), curry powder, red pepper and lemon juice.
Put the frozen pumpkin cubes in a bowl and put in the microwave for 5 minutes at 800 watts. Drain in a sieve.
Meanwhile, heat 2 tbsp oil in a saucepan and fry the onion for 5 min. On low heat. Slice the ginger. Add the garlic and ginger to the onion and fruit for another 2 minutes. Add the curry powder and fruit for another 1 min. Spoon the pumpkin and add fruit for another 2 minutes. Cut the stalk of the red pepper. Roll the pepper between your hands so that the seeds fall out. Cut the pepper into rings and keep a few behind for garnishing.
Put the pumpkin mixture in a high bowl or the cup of the hand blender. Puree everything and add 3 tbsp oil, the red pepper and the lemon juice. Mix for a while with the hand blender. Season with salt, cool and garnish red pepper with the retained rings. Tasty with toasted bread or grilled meat from the barbecue.
