Cut the peppers lengthwise into wafer thin strips. Mix them in a bowl with the carrot julienne, vinegar, olive oil and some salt and freshly ground pepper. Let stand for at least 15 minutes.

Spread the matzes generously with hummus. Put the matzos on plates and distribute rucola and paprika-carrot salad. Garnish with halved olives.
