Mayonnaise à la ravigote
French sauce of mayonnaise, sour cream, mustard, pickles, parsley, chives, shallots, tarragon and capers.

Mix the mayonnaise with the sour cream and mustard.

Cut the pickles into small cubes of ½ x ½ cm (brunoise) and chop the shallot. Add to the mayonnaise mixture.

Remove the leaves from the sprigs of parsley and cut finely. Slice the chives.

Add the parsley, chives, tarragon and capers to the sauce. Season with salt and pepper and stir.
