Meal salad with old cheese, ham, green beans and a dressing of mustard, mayonnaise and crème fraîche.

Boil the eggs hard in 8 minutes. Let them scare under cold running water, peel them and cut them into 4 parts.

Remove the stalk and the tip of the green beans. Cook them in plenty of water with salt in 8 minutes until al dente.

Rinse under cold running water and let it drain. Let the artichoke hearts drain and halve.

Cut the cheese into cubes and the onion into thin half rings.

Mix with the cooled green beans, onion, cheese, ham and arugula. Make a dressing of the mayonnaise, crème fraiche and mustard.

Season with salt and pepper. Carefully pour the dressing through the salad and garnish with the egg slices.
