Pasta with meatballs in homemade tomato sauce with spinach and spicy Parmigiano cheese.

Directions

  1. Bring a pan of water to the boil. Clean the garlic and cut finely.
  2. Heat the oil in a skillet and fry the garlic and stir-fry vegetables for 5 minutes on medium heat. Change regularly.
  3. Put the vegetables together with the tomato frito, pepper and possibly salt in a high bowl and puree with the hand blender into a sauce.
  4. Peel the onions and cut finely. Clean the frying pan with kitchen paper and heat the rest of the oil in the pan.
  5. Fry the onion and the meatballs all around brown in 5 min. Add the sauce and simmer for 5 minutes on low heat.
  6. Meanwhile, when the water is boiling, add the penne and possibly some salt. Cook in 10 minutes until al dente. Drain.
  7. Meanwhile, add the spinach to the sauce and let it shrink into parts. Season with pepper and salt.
  8. Spread the pasta over deep plates, scoop the sauce and sprinkle with the Parmigiano cheese flakes.
