Meatloaf with cherry tomatoes
A tasty Dutch recipe. The main course contains the following ingredients: meat, wholemeal rusks, olive oil, onions (chopped), minced meat (half-to-half), crème fraîche, ground cumin (djinten), tomato cubes (400 g), cherry tomatoes ((250 g), halved), garlic (finely chopped), red wine vinegar and brown caster sugar.

Preheat the oven to 200 ° C. Grind the biscuits in the food processor finely or crumble them in a plastic bag with a rolling pin.

Heat 2 tbsp oil in a frying pan and fry the onion for 5 min. Allow to cool.

Mix the mince with the crumbs, the onion, the crème fraîche, 1 tbsp cumin and salt and pepper to taste. Shape an oval 'bread' and place it in the baking dish.

Mix the tomato cubes with the rest of the oil and cumin, cherry tomatoes, garlic, vinegar and sugar. Add pepper and salt to taste and scoop the sauce over the meatloaf. Bake in the middle of the oven in approx. 45 minutes. Tasty with mashed potatoes and green beans.
