Medallions with avocado salsa


A nice Mediterranean recipe. The main course contains the following ingredients: meat, mango (peeled), avocados (peeled), cucumber (seed strips removed), red pepper (seed strips removed), spring onions ((bag of 3 pieces), in rings), olive oil, lime juice (bottle 115) ml), pork tenderloin (at room temperature) and butter.

Directions

  1. Cut the flesh of the mango, avocado and cucumber into cubes of 1/2 cm. Cut the pepper into thin strips. Mix the mango, avocado, cucumber, pepper and spring onions and shovel. Mix with 2 tbsp oil, the lime juice and salt and pepper.
  2. Fold over the thinner end of the pork tenderloin so that the meat is just as thick everywhere. Secure with the cocktail sticks. Sprinkle with salt and pepper. Heat 2 tbsp oil and the butter in a frying pan and fry the pork tenderloin in 10 min. Remove from the pan and leave to rest for 5 minutes. Cut the meat into slices of 1 1/2 cm. Serve with the avocado salsa. Tasty with fried potato slices and rucola salad.
