Mediterranean vegetable pancakes
A nice Mediterranean recipe. The vegetarian main course contains the following ingredients: roasted peppers (465 g), eggplant, beef tomatoes, olive oil, multigrain pancake mix (a 400 g), semi-skimmed milk, egg, mozzarella (cheese and a 125 g).

Peppers drain and cut into strips.

Clean eggplant and tomatoes and cut into pieces.

Fry 4 tbsp oil in casserole and braise the eggplant with tomato for 10 minutes, add the last 5 min.

Prepare pancake mix with milk and egg according to the instructions.

Heat the rest of oil in large frying pan and bake 4 pancakes.

Season the mixture of vegetables with salt and pepper.

Cut the mozzarella into slices.

Fill pancakes with vegetable mixture and mozzarella.

Delicious with cucumber salad..
