Mediterranean vegetable stew
A nice Mediterranean recipe. The vegetarian main course contains the following ingredients: olive oil, aubergine (diced), zucchini (diced), tomato cubes (400 g), cinnamon powder, couscous, Moroccan (disks (bowl a 2 pieces)) and fresh parsley (chopped).

Heat 2 tablespoons of oil in a frying pan and fry the aubergine with the zucchini for 5 minutes until they start to brown.

Add the tomatoes, cinnamon, salt and (freshly ground) pepper to taste and bring to the boil.

Then turn the heat down and stew the vegetables for 15 minutes.

In the meantime, prepare the couscous according to the instructions on the packaging.

Heat 2 tablespoons of oil in a frying pan and fry the Moroccan slices golden brown in 4 minutes.

Serve the couscous with the vegetables and Moroccan slices.

Sprinkle with parsley and salt and (freshly ground) pepper to taste..
