Ingredients
Directions
-
Place the basil leaves on top of each other, roll them up lengthwise and cut them into wafer-thin strips with a sharp knife.
-
Cut the melon into quarters and remove the seeds. Cut the flesh from the peel and scrape with a cheese slicer into erratic slices.
-
Spoon the melon in a bowl with the basil, the vinegar and some coarsely ground pepper. Allow the flavors to withdraw for at least 15 minutes.
-
Heat a bottom of oil in a very small pan.
-
Dip the remainder of the basil leaves with some at the same time in the oil and fry the leaves for about 30 seconds, until they are glassy and crispy.
-
Scoop the leaves out of the oil with a fork or a small slotted spoon and drain on kitchen paper.
-
Cut the ham into strips and spread with the marinated melon curls over the plates. Garnish the plates with the fried basil.
