Mezze with homemade flatbread


Homemade flatbread with grilled vegetables, unsalted pistachios, hummus and feta.

Directions

  1. Mix the yeast with the sugar and the lukewarm water. Let stand for 10 minutes.
  2. Mix the flour with the sumac and the salt in a large bowl. Make a well in the middle and add the yeast mixture.
  3. Mix the flour mixture little by little with the yeast mixture. Add the lukewarm water and knead into a cohesive dough.
  4. Form a bread roll of the dough and cover the bowl with a damp tea towel. Let rise for 20 minutes.
  5. Fry the grilled vegetables with the oil and the ras el hanout in 8 min. On medium heat until golden brown. Season with pepper and salt.
  6. Chop the pistachio nuts coarsely. Divide the hummus, feta, vegetables and pistachios over different containers.
  7. Make 8 balls of the proofed dough. Roll them out thinly on a floured sheet.
  8. Heat the oil in a large frying pan and fry two flatbreads in 3 min. Golden brown and done. Turn around halfway.
  9. Repeat with the rest of the dough and a ½ tbsp oil each time.
  10. Serve the flatbread with the mezze.
