Cut the chorizo into pieces. Chop the onion and cut the tomatoes into pieces.

Heat a large frying or mussel pan and fry the chorizo without oil or butter for 3 minutes. Add the onion and fry for 3 minutes.

Add the tomato, the bay leaf, the wine and chili pepper. Bring to the boil and let it boil gently until the bulk of the moisture has evaporated.

Rinse the mussels in plenty of cold water. Remove the open and damaged copies.

Add the mussels to the pan with the chorizo mixture.

Put the lid on the pan and bring everything to the boil. Cook the mussels in 5 minutes until done. Shake the pan a few times in between.

Slice the parsley. Sprinkle the mussels with the parsley. Bon appétit! .
