Noodle salad with cucumber


Oriental meal salad of noodles with chicken, peanut, ginger and cucumber.

Directions

  1. Peel and grate the ginger. Cut the spring onion into rings, squeeze the lemon and roughly chop the peanuts.
  2. Mix the ginger with the lemon juice, peanut butter, soy sauce and water to make a smooth dressing.
  3. Bring a pan of water with a little salt to the boil. Let the whole chicken fillets be cooked (poaching) in 20 minutes.
  4. Meanwhile, boil the noodles 8 minutes in water with a little salt. Drain and allow to cool under cold running water.
  5. Meanwhile, cook the snow peas in 3 min. Drain and allow to cool under cold running water.
  6. Mix the dressing with the noodles and season with salt and pepper.
  7. Cut the cucumber into slices and cut into strips of ½ cm. Cut the coriander coarsely.
  8. Cut the chicken fillets into slices.
  9. Mix the snow peas, cucumber, spring onion, chicken and coriander through the noodles. Sprinkle with the peanuts. Bon appétit! .
