Noodle salad with prawns and snow peas


Salad of noodles with snow peas, garden peas, a dressing of ginger, lime, chili and fish sauce with shrimps and coriander.

Directions

  1. Put the noodles in a bowl, pour boiling water until they are completely covered and leave to soak for 10 minutes.
  2. Meanwhile, cook the snow peas and garden peas in a pan of water in 3 minutes. Put the vegetables in a sieve, rinse under cold running water and let drain.
  3. Peel and grate the ginger. Grate the green skin of the lime and squeeze out half of the fruit.
  4. Beat a dressing of the ginger, 1 tbsp lime juice, the rack, the chili and fish sauce.
  5. Put the noodles in a colander, rinse under cold running water and drain.
  6. Mix with 2/3 of the dressing. Heat the oil in a frying pan and fry the shrimp with the rest of the dressing in 3 min. Until done.
  7. Cut the snow peas in the lenge in half, mix with the garden peas and coriander through the noodles and spread over a bowl.
  8. Divide the shrimp with the sauce over it and sprinkle with the coriander.
