Noodle soup with bok choy
Stir-fried noodles with bok choy, smoked chicken strips, coriander, ginger and dry roasted peanuts.

Slice the ginger into slices and put it in the soup mix with the water and the spice mix from the pack of stir-fried noodles. Bring to boil.

Turn down the heat and add the noodles in 3 pieces. Cook for 1 min on low heat. Cut the bok choy into strips.

Remove the noodles with a fork, add the bok choy and simmer for another 4 minutes.

Chop the peanuts coarsely and finely chop the coriander. Divide the chicken strips over 4 bowls.

Pour the soup over, sprinkle with the peanuts and coriander and serve.
