Heat the oil in a frying pan. Add the spinach in parts and let it shrink all the time. Pour off any moisture.

Add the chicken lemongrass, coconut milk and cauliflower to the spinach and cook for 5 minutes.

Add the shrimp and cook for another 2 minutes. Season with salt and pepper.

In the meantime, prepare the noodles according to the instructions on the packaging.

Serve the noodles with the shrimps and spinach in coconut sauce.
