Omelet with salmon and vegetables

Cut the tomato into pieces, remove the seeds and cut the flesh into cubes. Beat the eggs.

Heat the oil in a frying pan with non-stick coating. Add the egg and stir. Sprinkle the tomato, spring onions and salmon. Sprinkle with pepper.

Fry the omelette with the lid on the pan for 5 minutes until done. Halve and serve the omelet.

Sprinkle with extra pepper if necessary.
