Directions

  1. Cut the tomato into pieces, remove the seeds and cut the flesh into cubes. Beat the eggs.
  2. Heat the oil in a frying pan with non-stick coating. Add the egg and stir. Sprinkle the tomato, spring onions and salmon. Sprinkle with pepper.
  3. Fry the omelette with the lid on the pan for 5 minutes until done. Halve and serve the omelet.
  4. Sprinkle with extra pepper if necessary.
