Pad thai with zucchini noodles, chicken and peanuts

Cut the stalk of the red pepper. Halve the pepper in the length and remove the seed lists with a sharp knife. Slice the flesh finely.

Slice the garlic.

Heat the rice oil in a large frying pan and fry half of the garlic and half of the red pepper. Add the chicken and cook for 4 minutes.

Grate with the mandolin noodles from the courgettes. Mix the fish sauce, honey, tamarind and the rest of the garlic into a sauce.

Beat the eggs and add to the chicken and stir-fry 2 minutes until the egg has solidified. Chop the peanuts coarsely. Slice the coriander.

Add the zucchini noodles, sauce and bean sprouts and stir-fry for another 2 minutes. Cut the lime into wedges.

Sprinkle the pad thai with the coriander, peanuts, the rest of the red pepper and squeeze out the lime wedges above it. Yummy! .
