Pappardelle with zucchini
A tasty Italian recipe. The vegetarian main course contains the following ingredients: pappardelle (pasta, bag 500 g), olive oil, garlic (chopped), onion (chopped), vegetarian bacon strips (150 g), chestnut mushrooms ((250 g), in four), thyme leaves (fermented) ), white bread (lightly roasted) and zucchini (in slices of 1/2 cm).

Cook the pappardelle al dente according to the instructions on the package.

Meanwhile, heat 2 tbsp oil and fry the garlic and onion 3 min. Raise the heat and fry the bacon for 3 min. Add the mushrooms and cook for 3 min. Add the thyme leaves.

Cut the crusts of the bread and grind the bread into a crumb in the blender or food processor. Heat the rest of the oil in a frying pan and fry the bread crumb golden brown. Spoon on a plate. Heat 2 tbsp oil in the same pan and fry the courgette in 3 min. Golden brown on high heat. Season with pepper and salt.

Mix the pasta with the mushroom mixture and the zucchini. Spread over 4 deep plates and sprinkle with the bread crumbs.
