Roasted rack of lamb with potato
A tasty Spanish recipe. The main course contains the following ingredients: meat, potatoes, red onions, garlic, lamb racks (a 400 g), parsley, thyme, olive oil, (freshly ground) black pepper and salt.

Peel, wash and quarter potatoes. Peel onions and cut into wedges. Garlic peel and halve. With a sharp knife in each rack of lamb make 4 small notches and push half cloves of garlic. For garnish, remove 2 sprigs of parsley and 2 sprigs of thyme, finely chop remaining and stir in small bowl with oil.

Preheat the oven to 200 ºC or gas oven 4. Place racks in the center of the baking dish and sprinkle with black pepper. Place potatoes and onion around it. Spread herb oil over meat and vegetables. Bake in the middle of the oven in 30 to 35 minutes. Turn meat occasionally. Season with salt. Cut the remaining parsley and thyme finely and sprinkle over the dish. Halve lamb racks and place on four plates. Place potatoes and onions next to them.
