Italian pasta with aubergines, tomato cubes, garlic and old cheese.

Cook the pasta al dente according to the instructions on the package.

Cut the aubergines lengthwise and then cut thinly in width.

Place the slices in a colander, sprinkle with salt, drain. Dab dry with kitchen paper.

Heat the oil in a frying or frying pan and fry the aubergines in 5 minutes until golden brown.

Slice the garlic.

Spoon the tomato and the garlic into the aubergine and let it simmer for another 15 minutes on low heat.

Season the sauce with (freshly ground) salt and pepper. Spoon the sauce over the pasta and sprinkle with the cheese.
