Pasta dish with chicken in balsamic tomato sauce
Chicken fillets with balsamic basil tomato sauce with tomatoes, sun-ripened Taggia olives, flat parsley and pappardelle.

Bring a large pot of water with a little salt to the boil. Meanwhile, halve the tomatoes. Clean the onions and cut them.

Heat the butter in the frying pan and fry the onion with pepper and salt for 3 minutes on medium heat. Change regularly.

Add the tomatoes and chicken and cook for 3 minutes. Raise the heat, add the balsamic vinegar and cook for 2 minutes.

Add the pasta sauce and olives and heat for 2 minutes. Season to taste with salt and pepper.

Meanwhile, pour the pasta into the pan with boiling water and boil for 4 minutes until al dente.

Drain and mix with the balsamic tomato sauce. Slice the parsley and add. Divide the pasta over plates.
