Chop the shallot and finely chop the garlic. Peel the ginger and cut finely.

Heat the oil in a saucepan with a thick bottom and fry the shallot, garlic and ginger for 2 min.

Add the peanut butter and coconut milk and heat the whole while stirring to just below the boiling point.

Keep stirring until the sauce thickens. Stir in the sweet soy sauce, cumin and sambal and remove the pan from the heat.

Keep the sauce warm on the edge of the barbecue or above a tealight. Cut the coriander roughly and sprinkle the sauce just before serving.
