Penne with Mediterranean vegetable mix and anchovies
A nice Mediterranean recipe. The main course contains the following ingredients: fish, anchovy fillets in olive oil (48 g), penne (pasta), vegetable mix eggplant (celery and tomato (frozen), ready-to-cook spinach (bag) and grated Parrano (cheese 100 g).

In a large pan, bring plenty of water with salt to the boil.

Anchovy drain (collect oil) and cut into pieces.

Cook Penne in 10-12 minutes.

Heat 1 tablespoon of Anchovy oil in wok or frying pan.

Add anchovies and frozen vegetable mix and stir well over a high heat for about 8 minutes.

Picking spikes of spinach.

Add spinach halfway through baking time and fry until spinach has shrunk.

Drain pasta and create vegetable mix.

Spread pasta over four deep plates and sprinkle with grated cheese..
