Penne with chorizo, colored tomatoes and arugula
Creamy penne with chorizo, colored tomatoes, arugula and light-spiced Regato cheese.

Cook the pasta al dente according to the instructions on the package.

In the meantime, remove the skin from the chorizo, cut the sausage lengthwise and cut into pieces.

Heat a skillet without oil or butter and fry the chorizo in 5 minutes.

Meanwhile, cut the onions into half rings. Halve the tomatoes. Remove the chorizo with the skimmer from the pan and drain on kitchen paper.

Leave 2 tbsp grease in the pan and fry the onion 2 min. Add the tomato and cook for another 2 min. Pour in the cooking cream and bring to the boil.

Drain the pasta and scoop with the chorizo through the cream sauce. Season with pepper.

Put the arugula through it, spread over deep plates and sprinkle with the cheese.
