Remove the stalks and seeds from the peppers, cut the flesh into rings. Slice the shallot in rings and the garlic and parsley.

Heat the oil in a frying pan, fry the shallot 3 min. Add the peppers, garlic, tomato cubes, vinegar, pepper and salt. Bring to boil.

Turn down the heat and simmer for 30 minutes on low heat without lid. Stir frequently.

Sprinkle with the parsley and serve warm or lukewarm. Yummy! .
