The combination of coconut and pineapple makes this chicken dish nice and sweet.

Directions

  1. Remove the stalk and seeds from the bell pepper and cut the flesh into small cubes.
  2. Slice the garlic and cut the chicken fillet into thin strips.
  3. Heat the oil in a frying pan and fry the garlic for 30 seconds. Add the strips of chicken and fry for 3 minutes.
  4. Mix in the pepper and cook for another 1 min.
  5. Pour the coconut milk into the pan and add the curry powder and pineapple.
  6. Turn down the heat and simmer gently with a lid on the pan for 5 minutes.
  7. Season the coconut chicken and sauce with the lemon juice, pepper and salt. Yummy! .
