Pork fillet with plum sauce


Pork roulade with fennel seed, lemon pepper and a sauce of prunes, orange and anise.

Directions

  1. Preheat the oven to 160 ° C. Put the fennel seed and the lepper in the mortar and grind.
  2. Dab the roulade dry and rub around with this mixture (the spice mix from the package is not used).
  3. Roast the meat in the middle of the oven for 50 minutes. Remove the meat from the oven and let it rest for 15 minutes loosely covered under aluminum foil.
  4. Meanwhile, cut the plums into strips and squeeze out the orange.
  5. Put the plum strips with orange juice, star anise, bouillon tablet, water and butter in a saucepan. Bring to a boil and simmer for 10 minutes on low heat.
  6. Remove the star anise and pour into a tall cup. Puree with the hand blender into a smooth sauce.
  7. Add the hot water and stir in the sauce. Season with pepper and salt.
  8. Cut the meat into slices and serve with the sauce.
