Directions

  1. Allow the roulade to reach room temperature for about 1 hour. Preheat the oven to 175 ° C.
  2. Peel the apple, cut into quarters and remove the core. Cut the flesh into pieces.
  3. Remove the elastic from the roulade. Cut the roulade in length from the top to slightly beyond the center of the meat.
  4. Cut from this incision 4 cm to the left and 4 cm to the right.
  5. Place the slices of bacon in 2 rows and roof tiles on a cutting board. Place the roulade on top and open the meat.
  6. Divide the prunes, pieces of apple and cashew nuts over the meat and roll the bacon around it as tight as possible.
  7. Stretch the extra elastic bands from the packaging in the length and in the width around the roulade.
  8. Heat the butter in a frying pan. Fry the meat in 4 min. Brown and place in the oven dish.
  9. Insert the thermometer into the roulade but make sure it does not touch the filling.
  10. Bake the meat in the middle of the oven until it has reached the core temperature of 68 ° C. This takes approx. 50 min.
  11. Remove the meat from the oven and let it rest for 10 minutes covered with aluminum foil. Cut the roulade into slices.
