Potato omelette with paprika salad
A tasty Spanish recipe. The vegetarian main course contains the following ingredients: olive oil, onions (chopped), potato slices (700 g), eggs, paprika, fresh parsley (a 30 g, finely chopped), mixed peppers (3 pieces) and red wine vinegar.

Heat 3 tbsp oil in frying pan and fry onion and potato in 5 min.

Dissolve in eggs with 2 tbsp water, paprika, pepper and salt.

Stir in three quarters of parsley.

Pour mixture over potatoes, place lid on pan and allow eggs to coagulate over a moderate heat in 10-15 min.

Peppers wash, cut in four and remove seed lists.

Cut the quarters into small strips.

Mix pepper strips with 2 tbsp oil, vinegar, parsley, salt and pepper.

Cut the omelette into points and divide it over four plates.

Serve with paprika salad..
