Potato salad with arugula and parma ham
A tasty Italian recipe. The main course contains the following ingredients: meat, potatoes (Lady Christl), Greek yogurt (fat-free), green apple (eg Granny Smith), rucola (lettuce), capers, Parma ham, mayonnaise and extra virgin olive oil.

Clean the potatoes, but leave the skin.

Cut the potatoes into thick slices and cook them in a sealed pan with a base of boiling water and salt in 15-20 minutes until done.

Drain the water and allow the slices to evaporate.

In the meantime, whisk together a yoghurt sauce with the mayonnaise and season with (sea) salt and (freshly ground) pepper.

Cut the apple into thin strips and mix with the sauce through the hot potato slices.

Allow the mixture to cool slightly.

Tear the arugula into large pieces and scoop half of the arugula with the capers through the potato.

Divide the potato salad over four plates, drape a few slices of Parma ham on each plate and sprinkle some olive oil over the ham.

Garnish the salad with the rest of the arugula..
