Potatoes stuffed with sauerkraut beef
A tasty Dutch recipe. The main course contains the following ingredients: meat, potatoes (scrubbed), olive oil, onion (chopped), garlic (finely chopped), minced beef, sauerkraut ((uncooked), drained), curry powder, sour cream and parsley (finely chopped).

Preheat the oven to 250 ºC.

Pack the potatoes each in aluminum foil.

Let them cook in the oven in 20-40 minutes (depending on the size).

Make sure they are done by poking in with a fork.

Heat the oil in a frying pan and fry the onion and garlic until golden brown.

Add the minced meat and fry it while stirring over high heat free and brown.

Stir in the sauerkraut and fry for 2-3 minutes.

Season to taste with curry powder, salt and (freshly ground) pepper.

Leave to cook for 10 minutes on low heat.

Remove the potatoes from the oven, unfold the aluminum foil and cut the potatoes half open.

Spoon some of the sauerkraut mixture and a spoonful of sour cream into each potato.

Sprinkle with parsley and serve immediately.
