Provençal tortilla with soft goat's cheese
Vegetarian onion tortilla, garlic, onion, potato wedges, Provencal wok vegetable and Rondelé chèvre.

Peel the onion and garlic. Cut the onion into half rings and the garlic into slices. Beat the eggs in a large bowl slightly frothy.

Heat the oil in a deep frying pan. Fry the onion garlic, potato wedges and vegetables for 5 minutes. Sprinkle with herbs and season with salt and pepper. Scoop the cheese through.

Pour the beaten eggs over, leave on low heat with lid on the pan in about 20 minutes. Allow the tortilla to slide on a flat dish using a lid. Cut into points and serve.
