Pumpkin croquettes


A nice Mediterranean recipe. The vegetarian appetizer contains the following ingredients: pumpkin cubes (a 200 g), red onion, olive oil, mint, egg (split (protein is not used)), grated cheese, nutmeg and flour.

Directions

  1. Pumpkin in boiling water for about 5 minutes. Drain in the sieve. Squash the pumpkin with a fork. Peel onion and cut very finely. Fry 2 tablespoons of oil in frying pan. Sprout onions for about 2 minutes. Pumpkin puree gently fry and evaporate moisture completely. Finely cut mint leaves. Break egg yolk. Allow the puree to cool.
  2. Mix pumpkin puree with egg yolk, cheese and mint. Season with salt, pepper and nutmeg. Stir in so much flour that cohesive mass is created (about 5 tablespoons). Heat the rest of oil in large frying pan. Mix about 16 balls of pumpkin mixture. Lightly swirl balls through flour and fry until golden brown and cooked in portions in hot oil. Drain on kitchen paper and serve immediately.
