Pumpkin pasta
Spaghetti with pumpkin, hazelnuts, white cheese and parsley.

Clean the pumpkin, cut it into parts and remove the seeds and stringy inside and cut off the skin with a sharp knife.

Cut the pumpkin into small cubes and cut the onion.

Heat oil in a thick-bottomed pan, fry the onion until golden brown. Stir in the tomatoes puree and sugar and fry for 1 min.

Scoop the pumpkin cubes through the onion mixture. Fry them for 3-4 minutes. Season the mixture with salt and pepper.

Let the pumpkin cubes with the lid on the pan gently cook for 8-10 min.

In the meantime, cook the spaghetti according to the instructions on the package.

Chop the parsley, crumble the white cheese and chop the hazelnuts with a food processor.

Serve the pasta with the pumpkin sauce. Sprinkle with hazelnuts, cheese and parsley.
