Pumpkin pilaf with köfte


A nice Turkish recipe. The main course contains the following ingredients: meat, pumpkin, saffron, onion (chopped), garlic (pressed), olive oil, dried chili pepper (crumbled), cinnamon, raisins, basmati rice, vegetable stock (of tablet), minced beef, fresh coriander ((15 g), coarsely cut) and ground cumin (djinten).

Directions

  1. Cut pumpkin into parts, remove peel and seeds. Cut the flesh into cubes. Saffron soak in 1 tbsp water. In a large pan onion and half of garlic in 1 tbsp oil 1 min. Add the pumpkin, chili pepper, cinnamon and raisins and lightly cover for 10 minutes. Stir in the rice. Add broth and saffron. Bring to the boil and then simmer for about 10 minutes on low heat (on flame distributor) with lid, until rice and pumpkin are tender. Let Pilav cool down quickly and store in refrigerator. Cut into a food processor with half of fresh coriander, ground cumin, remaining garlic and ½ tl of salt and pepper finer grind. Forming a mixture of minced meat sausages of 5 cm long (= köfte). Store until refrigerated in refrigerator.
  2. Pilav gently warm. Heat the remaining oil in pan and chopped sausages in 8-10 min. Around brown cans. Dilute Pilav with the rest of coriander. To serve Köfte.
