Preheat the oven to 75 ° C.

Scoop the seeds from the tomato and cut the tomato into small cubes. Cut the spring onion into rings.

Mix the mince with the breadcrumbs, the Mexican herbs, spring onions, pieces of tomato and season with salt and pepper. Make sure it stays crumbly.

Brush the tortillas with the oil and place them with the oil side down on a shelf. Sprinkle the cheese on the tortillas.

Sprinkle the minced meat on top and sprinkle the cheese over it.

Put a tortilla on it and press it. Brush the tortilla thinly with oil.

Put a large frying pan on the fire. Put a quesadilla in it and put a lid (which is smaller than the pan!) On the quesadilla.

Fry the quesadilla on a low heat for about 8 minutes. Turn the lid with the lid and bake the other side for about 5 minutes.

Keep the quesadilla warm in the oven and bake the second quesadilla (or use 2 frying pans and bake at the same time).
