Quesadillas with zucchini and ham


A nice mexican recipe. The main course contains the following ingredients: meat, zucchini, wrapt tortillas, oil, onions (finely chopped), chilli powder, grated cheese, ham, endive (in thin strips), fresh coriander ((15 g), coarsely chopped) and lemon juice.

Directions

  1. Saute 24 long thin slices of the courgettes with a cheese slicer.
  2. Brush the tortillas on one side thinly with oil.
  3. Grab 2 frying pans.
  4. Place in each pan a tortilla with the oil side on the bottom, but do not turn on the fire yet.
  5. Mix the onion and herbs through the cheese.
  6. Spread some of the cheese mixture over the tortillas in the pan, place on each 3 slices of zucchini, 2 slices of ham and again 3 slices of zucchini.
  7. Sprinkle some of the cheese mixture and cover with a tortilla, with the oil side facing up.
  8. Fry these 'tortilla sandwiches' (quesadillas) 3-4 minutes on medium heat.
  9. Turn the whole carefully with a lid and bake the other side in 3-4 min.
  10. Golden brown.
  11. Let the quesadillas slide on a plate, keep them warm under aluminum foil and bake 2 quesadillas in the same way.
  12. Mix the endive with the coriander, 2 tbsp oil and the lemon juice.
  13. Place a salad of endive salad on each quesadilla..
