Quinoa Salad


Salad of quinoa with bacon cubes and broad beans.

Directions

  1. Cut the zucchini into cubes and the radish into wedges. Clean the lemon.
  2. Prepare the quinoa according to the instructions on the packaging and leave covered for 10 minutes.
  3. In the meantime, heat a skillet without butter or oil and fry the bacon cubes in 6 minutes.
  4. Remove from the pan with a slotted spoon and drain on kitchen paper.
  5. Cook the frozen green beans in 8 minutes until done. Rinse cold under running water. Remove the light green membranes from the beans (double caps).
  6. Heat the oil in the remaining shortening in the frying pan and fry the zucchini for 4 minutes.
  7. Grate the yellow skin of the lemon. Squeeze out the fruit.
  8. Mix with the quinoa, bacon cubes, broad beans, zucchini, radish, lamb's lettuce and pepper and salt.
