Quinoa salad with salmon on the skin
Healthy, fresh salad of quinoa with salmon fillets, rocket salad and Greek yogurt with lime.

Cook the quinoa according to the instructions on the package.

Clean the lime.

Grate the green skin of the limes and press the fruit.

Stir the quinoa with a fork. Add the grater, juice, some oil and the Tabasco. Allow to cool for 10 minutes.

Keep a sprig of dill per person for garnishing. Cut the rest fine.

Cut the spring onion into rings. Slice the leaves of the parsley. Slice the arugula.

Spoon the dill, spring onion, parsley and rocket through the quinoa. Season with salt and pepper.

Dab the salmon dry with kitchen paper and brush with some oil. Sprinkle with salt and pepper.

Heat the grill pan and grill the salmon in 5 minutes until done. Turn halfway.

Divide the quinoa over the plates and put the salmon on it.

Divide the yogurt over the salmon and garnish with the reserved dill. Sprinkle with some (freshly ground) black pepper.
