Quinoa sushi with avocado
Sushi from quinoa, nori rices, wasabi, cucumber, carrot and avocado.

Cook the quinoa according to the instructions on the package. Allow to cool.

Meanwhile, put the soy milk, oil, vinegar, mustard, wasabi and salt in a tall cup. Mix in 30 sec. to wasabi mayonnaise. Mix through the cooled quinoa.

Cut the unpeeled cucumber in half lengthwise and remove the seeds with a teaspoon. Cut the flesh lengthwise into 10 strips.

Cut the avocados half way through. Remove the kernel and scoop out the flesh with a spoon from the peel. Cut in strips lengthwise.

Wrap the bamboo mat in cling film. Put a nori sheet on it and spread a layer of quinoa of ½ cm thick over it. Leave 4 cm at the top.

Place some cucumber, avocado and carrot slices in the middle of the quinoa.

Roll up with the bamboo mat from bottom to top. Brush the overlapping nori with a little water so that it sticks. Make 4 more roles.

Cut each roll into 6 equal pieces. Yummy! .
