Vegetarian couscous with broccoli, eggplant and meat substitute

Prepare the couscous according to the instructions on the package.

Cut the broccoli into florets. Cook the broccoli in approx. 4 minutes until al dente.

Chop the onion and finely chop the garlic. Heat the oil in a frying pan and fry the onion for 3 minutes. Add the garlic and cook for 1 min.

Cut the aubergine into cubes of 1 cm. Add the eggplant and herbs to the frying pan and cook for approx. 5 min.

Add the Quorn pieces and season with salt and pepper. Bake for another 2 minutes and then spoon in the broccoli.

Divide the couscous over 4 plates and scoop the Quorn pieces with the vegetables.
