Boil the rice according to the instructions on the package. Allow to cool for 30 minutes.

In the meantime, cut the red onion into thin rings and mix with the vinegar and salt and let stand for at least 30 minutes.

Cut the spring onion into thin rings, the bell pepper into cubes and the leaves of parsley coarse.
