Directions

  1. Allow the roulade to reach room temperature in 60 minutes. Preheat the oven to 175 ºC.
  2. Heat the butter in an ovenproof oval frying pan. Sprinkle the roulade with salt and pepper. Roast over brown in 4 min.
  3. Put the pan without lid in the middle of the oven and roast for approx. 45 min.
  4. Turn the roulade halfway and bake with shortening, so the meat stays juicy.
  5. Allow the roulade to rest for 10 minutes with the lid on the pan. The meat juices then redistribute, making the meat nice and juicy.
  6. If necessary, remove the net and cut the roulade into slices.
