Rosemary salmon with salad

A nice Mediterranean recipe. The main course contains the following ingredients: fish, salmon fillet, dijonnaise (mustard mayonnaise, jar 200 g), grated young cheese (bag 175 g), dried rosemary, olive oil, baby potatoes (800 g), tomatoes (in parts) and red onion (in rings).

Directions

  1. Preheat the oven to 200 ºC. Place the salmon fillet in the baking dish and brush with 2 tbsp. Mix the cheese with the rosemary and pepper. Sprinkle the cheese over the salmon fillet. Fry the salmon fillet in the preheated oven for about 15 minutes until done.
  2. Meanwhile, heat the oil in a frying pan. Fry the potatoes in 12 minutes until golden brown and done. In a bowl mix the rest of the dijonnaise with 1 tbsp water. Scoop the tomatoes and onion rings through. Season with pepper.
  3. Divide the salmon over 4 plates. Scoop the potatoes and serve with the salad.
