Crush the peppercorns with the mortar and set aside.

Leave 4 beautiful leaves of basil for garnishing. Put the rest with the salt in the mortar and crush the leaves until the salt is green.

Halve and nip the nectarines. Cut the nectarines, tomatoes and mozzarella each into 8 slices of equal thickness.

Stack the slices alternately on top of each other to 4 turrets. Sprinkle each slice with basil salt and drizzle with oil.

Garnish with basil leaves, basil salt, oil and pepper.
