Salad soup with cucumber
A tasty Dutch recipe. The starter contains the following ingredients: poultry, cabbage lettuce, cucumber (in small blocks), crème fraîche, onion (finely chopped), olive oil and chicken stock.

Wash and dry the lettuce and cut the sheets into strips.

Fry the onion in a soup pot in the oil until it is golden brown.

Stir in the lettuce and half of the cucumber and fry for 2 minutes.

Scoop the crème fraîche through the vegetables, crumble the chicken stock cube above and pour 1 liter of water.

Let the soup come to a boil, reduce the heat and let the soup draw for 7-8 minutes.

Purée the soup using a hand blender or food processor and season with salt and pepper.

Divide the soup over four cups or deep plates and sprinkle the rest of the cucumber over it..
