Directions

  1. Grate the peel of the lime and squeeze the fruit.
  2. Halve the cucumber in the length, scrape out the seeds with a teaspoon.
  3. Halve the cucumber halves once again in the length and with a cheese slicer pull long ribbons.
  4. Dab the cucumber ribbons dry, sprinkle with salt and pepper to taste and scoop them with the lime juice and half of the lime zest.
  5. Allow the cucumber to stand for a moment, so that the flavor can withdraw.
  6. Mix the salmon mince with the rest of the lime zest, the egg and most of the dill (keep some dill for the garnish) and make 4 burgers out of it.
  7. Then roll them through the flower.
  8. Heat 2 tbsp oil in a frying pan with non-stick coating and fry the salmon burgers in 6-8 minutes, halfway through.
  9. In the meantime, heat the grill pan and cut the baguette into 4 pieces.
  10. Cut open the pieces and thinly coat them with oil.
  11. Grill the bread for 2 minutes.
  12. Let the baguette cool down and spread with the Dijonnaise (mustard mayonnaise).
  13. Spread a portion of the cucumber over the bread and lay a salmon burger on top, sprinkle with the rest of the dill.
  14. Serve the rest of the cucumber ribbons..
