Salmon with baked potatoes and peas
A tasty Dutch recipe. The main course contains the following ingredients: fish, potatoes (solid cooking), lemon (scrubbed), oil, salmon fillets, garden peas (extra fine (frozen)), fresh mint ((a 15 g), finely chopped), spring onions (3 pieces) and in thin rings).

Wash the unpeeled potatoes and cut them lengthwise into 8 parts.

Use a sharp knife or peeler to cut the yellow skin of the lemon and cut it into pieces.

Heat 4 tablespoons of oil in a stir-frying pan, the potato wedges and the pieces of lemon peel are golden brown and cooked in about 20 minutes.

Sprinkle to taste with (coarse sea) salt.

Heat 2 tablespoons of oil in a frying pan and fry the salmon fillets in 5 minutes on both sides until golden brown and done.

Cook the garden peas for 2-3 minutes.

Drain and mix 2 tablespoons of oil, fresh mint and spring onions.

Serve the salmon with the lemon potatoes and garden peas..
