Salmon with herbs-beurre blanc
A tasty recipe. The main course contains the following ingredients: fish, salmon fillet (advantageous packs of 650 g), lemons (cleaned), extra virgin olive oil, dry white wine, shallots (shredded), cold butter (in 1 x 1 cm cubes), chives (( 25 g), chopped), flat parsley ((a 20 g) and leaves finely chopped).

Preheat the oven to 200 ºC. Place the salmon in the oven dish. Grate the yellow skin of 1 lemon and squeeze out the fruit. Mix the grater with the oil and brush the salmon with it. Sprinkle with salt and pepper to taste. Halve the other lemon and lay next to it. Roast the fish in the oven for 15 minutes.

Bring the wine to a boil with the shallot and reduce to 1/3. Strain the wine and pour back in the pan. Turn down the heat and whisk together the blocks of butter with a whisk. Add 1 tbsp lemon juice and the herbs. Season with salt and pepper.

Place the salmon and lemon halves on a large scale. Serve the sauce separately. Tasty with potato salad with tarragon.
